Yellow Dog was designed by Sam Wammack, and it's made from all grain with no adjuncts or additives. This has proved to be a very fine malt extract, and it has made many prize-winning beers. Incidentally, the Yellow Dog, Teddy, is alive and well and chasing squirrels on our farm in Ozark, Mo. Yellow Dog Malt Extract is on Page 16 of this Catalog. Here are some great recipes. The brewing procedure on these is standard, as on the inside back cover of this Catalog. Yellow Dog Pale Ale Kraut Dog Oktoberfest 6.6 lbs. (2 packs) Yellow Dog Malt Extract 6.6 Ibs. (2 packs) Yellow Dog Malt Extract 1 cup whole Crystal Malt, remove at 170 deg. 1 oz. Hersbrucker Pellets (5.3) in boil 1 pack Burton Water Salts No finishing hops 1 pack Yeast Nutrient/Heading Salts 1 pack Wycast Lager Yeast (your choice) 3/4 oz. Chinook Hop Pel. Irish Moss in last 15 mins. of boil a fermentation at 42 degrees until finished. 2 packs Doric Yeast or 1 Wyeast Liquid Ale Starting Gravity 1.048 Final Gravity 1.013 3/4 cup Corn Sugar for priming Starting Gravity 1.047 Final Gravity 1.012 Black Dog Porter 20.0 1/2 lb. Dark Crystal Malt, crushed 80.0 Brown Dog Brown Ale um 1/4 lb. Black Patent Malt, crushed For a good Brown Ale, simply play with 1/3 lb. Chocolate Malt, crushed the above Pale Ale recipe a little. That's important information to a homebrewer. Yellow Dog is 87% 2-row Klages, 12% Malted Wheat, and 1% Chocolate Malt. The grains are crushed together and there is a single infusion mash at 160 degrees. One 3.3 lb. package of Yellow Dog will yield about .024 in Specific Gravity in 5 gallons.
